Fermented Green Cabbage Guacamole

Fermented foods create probiotics which are healthy bacteria that repair the gut. When we promote good bacteria, we can reverse disease because 80% of our immune system is in our gut flora! It is important to have probiotics after the use of antibiotics, although antibiotics should always be avoided! You can learn more about disease reversal, on our 'disease' and 'health' tabs above. A couple weeks ago, we fermented some green cabbage with leeks, celery and a hint of basil. Today, we cracked open our jar and added our fermented cabbage to some guacamole with kale! Very tasty! Check out our recipe below. Enjoy!

Carrot Soup With Ginger

The benefits of ginger include anti-fungal and anti-inflammatory properties. It also helps reduce symptoms of nausea and vomiting and promotes healthy sweating that assists in detoxification
We love soup broth with ginger, so we incorporated it into our carrot soup recipe. It's now been almost two weeks that we began our grain free and 80-90% raw food diet. We're taking in raw food enzymes before we eat any cooked/steamed vegetables to assist in digestion. Today, we ate some sprouted mung beans before having our soup, to help provide us with the nutrition the Carrot Soup With Ginger had to offer. See recipe below. Enjoy!

Ice Cream 'Cannoli' - Raw

For our latest raw dessert, we made Ice Cream 'Cannoli' topped with a 'caramel' sauce made of raw organic honey. Raw honey predigests food! It has a significant amount of plant amyalse which does not come from the bee, but from the pollen of the flowers. You can predigest food when you eat raw honey, and the more you chew, the more digestion takes place. Check out our recipe below for the 'cannoli' shell and assembly process. Enjoy!

Fermenting Cabbage with Basil

It is important to have pro-biotics after the use of antibiotics, although antibiotics should always be avoided! Fermented vegetables create pro-biotics which are beneficial for the immune system because it provides healthy bacteria to the gut flora which can fight against bacteria, viruses and 'diseases'! Fermenting foods is really simple to do. A while ago, we began fermenting some green cabbage with leeks, celery and a hint of basil. Our indoor cherry tomato plants had been growing really slow since we planted them a few months ago. Growing indoor vegetables and herbs is challenging, but rewarding with a little patience. We were concerned about their growth so we went to get some advice. After visiting an indoor gardening supply shop, we purchased another grow light and some vitamins/nutrition for our cherry tomato plants. We replanted them into larger pots, added some new soil with vitamins and since then, it has made a dramatic difference. Our tomato plants are now flowering and it's just a matter of time that we begin to pollinate and see our first cherry tomatoes emerge!
A few weeks ago, we also purchased a small potted basil plant from our organic delivery service and we split the plant in two. We also cloned it to start a third plant and the results are looking good so far!

Double Cacao Dipped Mini 'Donuts' - Raw

Some common ingredients in raw desserts are nuts, pitted dates, seeds, coconut and raw cacao. Raw cacao is very nutritious and considered a 'superfood'. It contains unique properties and minerals that include high levels of magnesium.
For our new raw dessert recipe, we created Double Cacao Dipped Mini Donuts! We were limited by the ingredients we had available, so feel free to use other ingredients you may have such as shredded coconut. The ingredients in this recipe can also be used to prepare raw brownies or truffles as well. The process is easy and effective for creating mini donuts that look like the real thing! Give it a try. Green Peas and Corn With Cauliflower 'Rice'

Cauliflower is an excellent alternative to rice (grain) and can be served raw. Cauliflower has antioxidants, anti-inflammatory benefits and improves digestion. For our 'raw' dinner last night, we steamed some healthy organic green peas and spinach that we added to a raw cauliflower 'rice' mix that included raw corn, raw (pre-soaked) pumpkin seeds and fresh basil from our indoor basil plant. Watermelon Rind Juice

Watermelons are very nutritious and helpful for cleansing our bodies. For years, we only ate the red part of the watermelon but we recently discovered that this important fruit is completely edible! The rind holds the most nutrients and contains chlorophyll. Chlorophyll has the power to regenerate our bodies, fight infection and promote the health of the circulatory and digestive system. Raw Avocado And Corn Soup

As part of our raw menu this week, we created a simple 'Avocado And Corn Soup' recipe that is served cold. For the broth, we boiled some water with vegetables (including the corn cob for flavor). Once ready, we discarded the cooked vegetables and allowed the broth to cool down completely before adding our raw sweet corn and avocado with more raw vegetables! When you boil vegetables, the nutrition is transferred to the water so we were able to get additional health benefits from the broth. See recipe below and check out our previous Avocado Soup recipe. Today, we start a four month journey to cleanse our bodies of accumulated toxins and foods! We chose a four month period based on the blood cells regenerating every 120 days. For two years now, we have eaten strictly organic foods. Our gluten free journey began about one year ago. But because it's only been 2- 6 months that we began pre-soaking nuts and seeds, and grains including flour, it's impossible to know how effective gluten free flours and pre-soaked grains are - until we first cleanse our bodies of the unhealthy accumulated seeds, roasted nuts, grains, and gluten flours! 
Even though we feel healthier, our bodies are still accumulated with toxins from years of abuse when we were ignorant about the harmful effects of sugar, dairy, processed foods, caffeine and alcohol. In order to remove these toxins, we need to change our diet accordingly. We'll also have to eat less on our bloated days - something we are experiencing from switching to an 80% raw food diet. 
Our (now grain free) diet will consist of mainly raw foods, which means we will get more creative with the food we'll be preparing. However, since Fall and Winter is approaching, we will be including soups, baked potatoes and steamed vegetables in our menu. We will also be eating a lot of sprouted vegetables, including sprouted mung beans. 
We'll be sharing some of our daily menus in our upcoming posts, so stay tuned for some tasty and even healthier recipes!

Homemade Honey Nut Muesli

We are incorporating raw foods daily, to take in digestive food enzymes that aid in digestion and overall health. Enzymes are necessary in our diet! Homemade Muesli is an excellent raw food breakfast idea, as long as you are not on a grain free diet. A couple days ago, we prepared Apple Cinnamon Muesli by oven dehydrating our ingredients for 2-3 hours (you can use a regular dehydrator). Our oats and nuts were pre-soaked for 24 hours prior to dehydrating. Today, we had some homemade Honey Nut Muesli- very tasty and healthy! Check out our simple recipe below.
Honey contains a variety of vitamins and minerals including Vitamin C, calcium and iron. Enjoy!

Homemade Apple Cinnamon Muesli

Cinnamon has anti-fungal, antibacterial and anti-parasitic properties! For breakfast, we decided to make homemade Apple Cinnamon Muesli with hemp seeds. There is something pleasant about the smell of warm cinnamon and apple. We dehydrated all our ingredients in our conventional oven, after 24 hours of pre-soaking them in water. Try our recipe below over the weekend (or prepare muesli the evening before) and enjoy the aroma of apple and cinnamon while they dehydrate. All enzymes remain active once ready, so it is a healthy treat!

Lemon Hemp Seed Cookies

Hemp seeds are very healthy and can be incorporated into baking. They contain many nutrients such as iron, calcium and vitamin D. Lemons have unique phytonutrient properties and are an excellent source of vitamin C. The Dangers Of Microwaved Foods

It's surprising to find 'healthy' food blogs online that suggest the use of microwaves. We thought it was important to share some information on the negative effects of microwaved foods for those who are interested.

Microwaved foods are toxic because the structures of the molecules in the food are deformed or impaired by the violent destructive power of the AC current, which no atom, molecule, cell or organic system is able to withstand. Microwaved foods modify cellular activity in the body so that the cells are forced, by the damaged cells, to adapt into an emergency mode that forces them from a normal cellular oxidation state into anaerobic energy production of glucose fermentation. This state allows cancer cells to survive and thrive because cancer cells cannot exist in oxygen, and anaerobic glycolysis uses glucose as a fuel in the absence of oxygen.
Simply put, when you eat microwaved foods, you are creating a cancer thriving environment for your body!

Butternut Squash Filled Cabbage Rolls

Butternut squash provides about one-third of the Daily Value of vitamin C in every cup. It's orange color indicates an abundance of nutrients known as carotenoids, that are shown to protect against heart disease.  
Red cabbage has an excellent source of antioxidants and has more nutritional benefits than green cabbage. We love the taste of oven baked red cabbage and fermented red cabbage!
