Zucchini (summer squash) is an excellent source of carotenoids lutein and zeaxanthin. Carotenoids are powerful antioxidants that protect our cells from damage caused by free radicals. Carotenoids, specifically beta-carotene, also enhance the function of the immune system.
There are more nutrients in zucchini than in cucumbers! Zucchini has a higher percentage of vitamin C, potassium, magnesium and manganese than cucumbers. Since cooking food kills the enzymes and lowers the nutritional value of vegetables, it is good to consider a raw summer (squash) pasta so you can gain all the nutrients and enzymes it provides. Summer Squash Pasta Recipe UPDATED
Serves 1-2
Prep Time 15 minutes!
Ingredients for pasta:
∙ 2 zucchini/summer squash
Directions:
1. Using a carrot peeler, peel zucchini (until you reach the seeds) and evenly distribute peels to 2 plates or bowls. Do not discard of the the skin peels as it holds the most nutrition!2. Top off pasta with raw tomato sauce and enjoy!
