Homemade Fudgesicles With Pumpkin Seeds

The best raw dessert we have tried so far is homemade ice cream. It's organic, dairy-free and sugar free! It contains enzymes, nutrients and antioxidants! There is a variety of flavors that we choose from including strawberry, vanilla, cacao, and green tea. Over the weekend, we purchased some IKEA Popsicle Makers for only $1.99! We used our ice cream recipe and tried it out on the popsicle makers. The result was tasty fudgesicles! See recipe below. We also made some fresh cacao syrup that we dipped our fudgesicles in, once they were frozen. And then we topped it all of with chopped organic pumpkin seeds... yummy!

Beet Carrot Cacao Mini Muffins

For a while now, we've been wanting to bake something with the left over pulp from our carrot and beet juices. We always save the left over shredded coconut and frequently use it for baking so we thought it was about time we do the same when we juice beets and carrots. We have a generic muffin recipe that we created to use when we make muffins. The recipe is similar to our 'Apple Cinnamon Oats Muffins' recipe except instead of using shredded coconut, we replaced it with the beet and carrot pulp, and instead of cinnamon we added cacao (see recipe below). We also don't bake with raw honey any more but instead drizzle it on our baked goods once they have been baked and cooled off, this way we get the nutrients and enzymes that honey provides. Enjoy!

Yellow Zucchini 'Ravioli'

Zucchini pasta is very tasty, energizing and easy to prepare! After trying out zucchini pasta noodles, and loving it, we decided to try it a different way and make them into 'raviolis'. There were different recipes online but they were all grilled in order to keep the zucchini rolls closed to hold the 'stuffing'. We didn't want to cook them (or it would kill the enzymes) so we just used toothpicks to close them shut and we stuffed them with lightly fried oyster mushrooms, leeks, shallots, red onion and garlic! Spicy Mango Salad

Other than cold soups, salads are another great option for raw food ideas. One of our favorite salads is the Spicy Thai Mango Salad. The mix of spicy, sweet and sour makes it a flavorful meal! Our salad was made with all raw ingredients including red onion, cilantro, garlic, ginger and lettuce with a mix of spice! Very tasty and energetic!

Mini Cacao Zucchini 'Flat' Cakes

We love cacao because it tastes just like chocolate, but is a healthier alternative because it contains antioxidants. We're still baking with pre-soaked gluten free flours until we decide to go 100% raw. We are still experimenting with raw foods and are at least incorporating it in our diet 80% of the time.

Mung Bean And Kelp Soup - Raw

Mung beans have a rich source of nutrients such as protein, iron, zinc, potassium, magnesium, manganese, vitamin C and thiamine. B vitamin, thiamine, is needed to ensure that the nervous system functions properly. Mung beans are easy to digest, and absorb toxic residue on the sides of the intestinal walls.
Seaweeds contains a high amount of iodine, which is an essential trace mineral needed in the functioning of the thyroid gland. We also need a sufficient amount of iodine so that it doesn't take on the radioactive iodine that is present in the environment and can cause toxicities in the body. Since we are incorporating more raw foods, we decided to make a raw version of Mung Bean and Kelp Soup. (see recipe below) The soup remained at 100° temperature so no enzymes were  killed. Enjoy!

Avocado Soup and Shiitake Mushrooms With Brown Rice

Avocados are an excellent source of protein. They provide all 18 essential amino acids that the body requires to form protein. It contains antioxidants, anti-inflammatory nutrients and beneficial fats that protect the body against damage caused by free radicals. 
Celery is rich in vitamin A, vitamin C, vitamins B1, B2, B6, calcium, magnesium, iron and essential amino acids. When you juice celery, nutrients are released in the fiber that aids in digestion. An excellent choice for raw foods are soups. You can simply blend organic vegetables of your choice and serve them up in under 15 minutes. (see recipe below)

Dinner And Dessert

For a week now, we have been incorporating raw foods in our diet! Whether we eat 100 % raw all day or 70% raw, we are finding it to be beneficial. There is energy in raw foods that energize you after a meal instead of making you feel tired. We love green curry rice and decided to experiment with a raw version of green curry milk over a bed of pre-soaked (cooked) gluten free brown rice. The results were amazing! The rice was pre-soaked for 24 hours and then cooked. We did the green curry paste separate and added homemade coconut milk* to it. The garlic and onions were soaking in water for 15 minutes and then added to create the curry paste. Once the rice was cooked, we let it sit until it got to about 100°. We then poured the green curry with coconut milk in the rice and stirred for 2-3  minutes. The subtle warmness helped the green curry milk mix well with the rice and it tasted really good! We topped it off with some fresh guacamole and cilantro. We also made some Green Tea Ice Cream (see recipe below). Give it a try!

Simple Summer Pasta

Zucchini (summer squash) is an excellent source of carotenoids lutein and zeaxanthin. Carotenoids are powerful antioxidants that protect our cells from damage caused by free radicals. Carotenoids, specifically beta-carotene, also enhance the function of the immune system. There are more nutrients in zucchini than in cucumbers! Zucchini has a higher percentage of vitamin C, potassium, magnesium and manganese than cucumbers. Since cooking food kills the enzymes and lowers the nutritional value of vegetables, it is good to consider a raw summer (squash) pasta so you can gain all the nutrients and enzymes it provides. Zucchini pasta is very tasty, energizing and easy to prepare. See recipe below. Last weekend we prepared cucumber rolls, also very easy to do. Enjoy!

Gazpacho Soup With Zucchini Pasta

Gazpacho soup is served cold so we thought it was perfect as a raw meal. Over the weekend we made our first Gazpacho soup with vegetables, corn, coconut cream and avocados. Yesterday we made a Gazpacho soup with red beets, fennel, a blend of onions, garlic, coconut cream and avocados. It tasted amazing! We absolutely love red beets with tomatoes (Gazpacho recipe below). We decided to keep it raw and also made Zucchini Pasta with fresh salsa on top, to act as a tomato sauce. There will be lots of zucchini pasta in the upcoming days- it was delicious!!!

Live Vegetables With Rice

Raw yolks help eliminate toxins from your body! Since we are trying to incorporate more raw foods in our diet, we created a meal of raw veggies and egg yolk on a bed of pre-soaked cooked brown rice. The eggs we purchase are organic free range chicken eggs, so they come from happy healthy chickens. This meal is easy to do and will benefit your body (see recipe for details). Cauliflower provides us with antioxidants and is an excellent source of vitamin C, and a very good source of manganese. Enjoy!

Double Dose Of Oats

In earlier posts we mentioned the importance of pre-soaking grains, seeds, nuts and even flour! When you pre-soak grains, nuts and seeds, you are releasing nutrients and enzymes that allow you to digest food more easily. We pre-soaked some oats for 24 hours and created a new recipe for muffins, using coconut flour. Unlike other flours, coconut flour does not need to be soaked because it is neither a grain or nut. We were inspired by BakerStreet to create 'Apple Cinnamon Crumb Muffins'. We don't use most of the ingredients the recipe called for so we had to do our own rendition with coconut flour (see recipe below). We also baked a new version of our Oats and Shredded Coconut Cookies made with pre-soaked brown rice flour (recipe coming soon). Enjoy!

Live Curtido Salad

We've been fermenting lots of red cabbage to create healthy bacteria for a strong immune system! It is important to have pro-biotics after the use of anti-biotics in order to have a strong immune system! Our latest live salad recipe was created with fermented 'curtido' along with some fresh parsley and summer squash. Summer squash (yellow zucchini) is an excellent source of manganese and vitamin C. It is also a good source of vitamin A which supports the immune system. Give it a try! (see recipe below)

The Benefits Of Dehydrated Foods

Dehydrating food removes the water content but it does keep the enzymes, vitamins and minerals in place. There are a few controversies about the health benefits of dehydrated foods so we wanted to share our own views on it. During the winter, food preservation is important. We can't always get fresh garden vegetables, especially if you choose to live sustainably and not depend on a grocery store. Dehydrated foods are beneficial for this reason and snacking on dehydrated foods from time to time is healthy as long we hydrate ourselves accordingly. We absolutely love kale chips and sometimes our kale sits in our fridge for too long and goes bad because we have lots of vegetables in our fridge. We like to dehydrate food to put food preservation into practice and save our veggies!

A Raw Menu

Over the weekend, we decided to eat strictly raw meals! So far, the only issue we seem to have with raw foods is tolerating the strength of raw onions, raw garlic and raw ginger. We created recipes that would create a milder taste (from the power of raw onions) by incorporating plenty of vegetables and coconut cream. The food tasted amazing! It consisted of appetizers, a main course and double desserts (recipe for ice-cream is available at the bottom of the post, Gazpacho recipe coming soon...). Enjoy!
